Quick backstory here, I was pescatarian for a very long time, and partially because tuna salad was my favorite thing in the
world. Well fast forward to now, I've been an ethical vegan for 1 month (and also because my body feels 1000x better this
way, but that's just me, everyone's body is different) and I've been craving tuna. Well today I have for you, the best mock tuna salad ever, and the texture and taste are better than the real thing, and I only say that because my stepdad (who isn't normally a huge fan of vegan food) told me so. So let's get to it, shall we?
You need:
- 2 cans of no salt added, preferably organic chickpeas, rinsed
- 3 large dill pickles, largely chopped
- 1/4 cup celery or red onion, diced
- 2-4 Tbsp veganaise
- 4 Tbsp yellow or dijon mustard
- 2 tsp garlic powder
- 1-2 Tbsp pickle juice
- black pepper, to taste
- sriracha, to taste
- green onions, chopped
How to:
- Place the first 5 ingredients in a food processor or high speed blender, and pulse until very roughly chopped
- Add remaining ingredients except the green onions and pulse until it turns to the consistency of tuna (just a couple more times)
- Place "tuna" salad in an avocado cup, lettuce leaf or on bread for a yummy lunch or dinner
